There’s nothing like the sweet aromas of cinnamon and apple brewing in the kitchen on a cold day! And since Mother Nature CLEARLY thinks it’s still winter, what better way to warm up then to bite into some homemade baked goods!
*all ingredients are organic*
These little nuggets are full of flavour and super simple to make (not to mention that they freeze beautifully). They’re the perfect bite-size snack or breakfast on the go and kiddo friendly which is a bonus!!!
All you do is combine your flour, oats, baking powder, cinnamon and salt and set it aside as you prep your wet ingredients.
I like using extra ripe bananas for this recipe because they are easier to work with when baking and they are also really sweet because the natural sugars have developed. Not to mention that you can use the nutrients from the peel for a quick facial or spot treatment 😎.
Carefully fold your dry ingredients in with your wet ones until it’s jut combined and then fill a greased mini muffin tin 3/4 of the way with the batter. Bake them at 350°C for 15-18 minutes and allow them to cool on a rack for 2 minutes before enjoying.
Eat as is or break them open and indulge with a little butter. 😍😍😍
Trust me, you just can’t have 1. This recipe usually makes about 32 mini muffins and I usually have to make 2 batches at a time. Both hubby and Z just gobble them up….ok fine I help as well 🙈.
See for yourself how good these are. I promise you that your family will be asking you to make them over and over again.
So the next time you have some bananas laying around that aren’t looking so hot, mash them up and give this recipe a whirl and don’t forget to take a pic and tag me on Instagram.
Until next time, stay warm and get your bake on 😎✌🏼.
