Veggie Skillet – Getting Your Family to Eat Healthier!

Hey everyone!  Hope that you all are doing well today.  As promised, I have a healthy veggie skillet recipe for you today.  This is going to be one of those quick and dirty recipe ideas that you’ll be able to adapt to any dish in no time at all!

Eating healthy and making sure that you are having enough veggies can be a constant struggle.  Ever since my family and I started to ‘Eat Clean’ 3 years ago and moved to a 80% plant based diet I had to find a quick and easy way to up my veggie game.  Just a quick steam or stir-frying wasn’t hitting the spot anymore.  We were craving flavour while still trying to maintain all of the nutrients and vitamins.

If you’re in the same boat I’ve got you covered.  A few months ago I bought a cast iron skillet and O-M-G… it has forever changed my life!  I have no idea why it took me so long to invest in one!?!??  Ever since I started using it I haven’t made veggies any other way.veggie skillet

I simply heat some olive oil in my skillet over medium-high heat, chop up whatever veggies I have from my Mama Earth Organics delivery that week in approximately 1″ cubes and toss everyone in.  Add some chopped garlic, dried parsley, basil, salt and pepper.

Toss everything around until the veggies start to sear and crisp up.  Then I add 1/2 cup of water or chicken stock and a few dashes of liquid smoke – if you’ve never tried this you have no idea what you’re missing!

Top is off with some fresh greens and you’ve got a healthy skillet of caramelized and charred veggies that is packed with flavour!  It goes perfectly with any dish and the best part is that Z gobbles up every last veggie on his plate.
